- 1 medium zucchini, washed and sliced thin
- 1 Tablespoon Garlic Avocare Avocado Oil
- 2 teaspoons apple cider vinegar
- Coarse sea salt, a good couple of pinches
- Tiny pinch of garlic powder
- 5 yellow cherry tomatoes, washed and sliced into 4 slices each
- Finely ground black pepper, to taste
- Chopped chives, for garnish
- Toss zucchini with oil, vinegar and salt, then set aside while you slice the tomatoes.
- On a serving platter, layer zucchini with tomato slices, then sprinkle pepper and chives on top evenly.
- Serve immediately, or chill if desired before serving.
- Serves 2 hearty portions or 4 small portions.
