Zucchini & Yellow Cherry Tomato Salad with Chives and Garlic Avocado Oil

Ingredients
  • 1 medium zucchini, washed and sliced thin
  • 1 Tablespoon Garlic Avocare Avocado Oil
  • 2 teaspoons apple cider vinegar
  • Coarse sea salt, a good couple of pinches
  • Tiny pinch of garlic powder
  • 5 yellow cherry tomatoes, washed and sliced into 4 slices each
  • Finely ground black pepper, to taste
  • Chopped chives, for garnish
Instructions
  1. Toss zucchini with oil, vinegar and salt, then set aside while you slice the tomatoes.
  2. On a serving platter, layer zucchini with tomato slices, then sprinkle pepper and chives on top evenly.
  3. Serve immediately, or chill if desired before serving.
  4. Serves 2 hearty portions or 4 small portions.
