Tomato Spring Onion & Herbed Chevre Salad

Ingredients per serving:
  • 3 or 4 red cherry tomatoes
  • 1 sweet spring onion, green portion removed, sliced very thin
  • 1 to 2 Tablespoons herbed goat cheese rounds or crumbles
  • Coarse sea salt, a good pinch
  • White pepper, to taste
  • A hearty drizzle of Avocare Basil Avocado Oil
  1. Slice the tomatoes into 3 or 4 slices each, depending on their size. The ones I get in France right now are quite large, so they make 4 nice thick slices.
  2. Place tomatoes on a cold salad plate, top with onion slices and cheese.
  3. Sprinkle with salt and pepper, then drizzle oil.
  4. Serve immediately. Do not chill the salads prior to serving as it will detract from the flavor of the fruit.
